Lentils with Zucchini and Rice

Start by preparing the rice. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit with the lid on.

While the rice is cooking, take advantage to prepare the vegetables. Wash the zucchini and chop into medium size dice. Slice the onion.

Add some olive oil into a pan. When it's hot add the zucchini and onion, a pinch of salt, and cook over low heat for 7-10 minutes.

Open the container of lentils and wash them under water.

Add these lentils and the rice to the pan. Sauté everything for 4-5 minutes on medium heat. Your dish is now ready to be enjoyed!
Tips & Tricks
If you have rice in your fridge that's ready to go, perfect! It'll lower the cooking time for this dish. Cooking time will also be lower if you decide to use pre-cooked rice.
