Instructions

Wash and cut the broccoli into florets. Boil for 5 minutes in a pan of water with a little added salt. Once cooked, drain and chop finely. If it's easier for you, use a blender or food processor.

Peel and cut the sweet potato into chunks or thin slices. Boil in a pan of water with a little added salt. When soft, turn off the heat and drain. Put the boiled sweet potato into a bowl and mash well with a fork.

Mince the garlic clove. Make sure the pieces are tiny.

Preheat the oven to 400°F.

Combine the chopped broccoli, mashed sweet potato, minced garlic, grated cheese, and oats in a bowl. Mix well using your hands. Once the mixture is smooth, shape into small balls.

Place on a baking sheet lined with parchment paper and bake for 20 minutes at 400°F. Then remove from the oven.

Tips & Tricks

Remember to grease the parchment paper a little to ensure the meatballs don’t stick.

Serve the meatballs with a yogurt dressing. It’s super easy to make. You can find our yogurt dressing recipe in the app’s “Sauces” category.

If you want to add extra flavor, season the meatballs with soy sauce. Cook the vegetables without adding salt to the water. When you mix all the ingredients in a bowl, add a couple of teaspoons of soy sauce. Mix in well and then make the meatballs.
