Instructions

Wash and halve the cherry tomatoes.

Preheat the oven to 400°F.

Peel and cut the sweet potato lengthwise into slices roughly 1/2 inch thick. Depending on how many mini pizzas you want to make, use half or the whole sweet potato. Arrange the slices on a baking sheet. Bake in the oven at 400°F for 10–15 minutes. Turn over and bake for 10 more minutes.

When cooked through, take out of the oven. Sprinkle a little grated cheese or place a slice of cheese on top of each sweet potato slice. Arrange a few halved cherry tomatoes on top. Return to the oven for just 3–4 minutes to melt the cheese.

Take out of the oven and serve on a plate, sprinkling a little pepper on top.

The cooking time is approximate depending on your oven and on the thickness of each slice. Check them every so often and turn once cooked on one side.

Feel free to mince a few basil leaves and sprinkle on top.
