Preheat the oven to 400°F.

Wash the sweet potato and cut in half lengthwise. Place both halves onto parchment paper and drizzle with a bit of olive oil. Place into the oven and bake for approximately 35 minutes (the time varies for each oven).

Remove the sweet potatoes from the oven and carefully remove the flesh.

Mix the sweet potato flesh with the cooked beans in a bowl and fill the sweet potatoes with this mixture. Sprinkle some cheese on top and put into the oven again for just a few minutes, until the cheese melts completely.
