Savory Broccoli and Cheese Muffins

Preheat the oven to 400°F.

Wash the broccoli, cut into small pieces and cook in a pot of boiling water for 4–5 minutes. Drain, let cool and cut (or mince) finely.

Mince the onion.

Heat a little olive oil in a skillet. Add the onion and lightly fry for a couple of minutes, stirring often.

Add the chopped broccoli and season with a pinch of salt. Continue to cook for 2–3 more minutes.

In a bowl, combine the cooked broccoli and onion, the beaten eggs, and the cheese. Use a spoon to mix well.

Lightly grease a muffin tin and pour in the batter. Bake in the oven for about 20 minutes, or until a toothpick inserted into the center comes out clean.
