Instructions

Wash and finely dice the tomato and green bell pepper. Mince the onion.

Heat a little olive oil in a skillet and add the tomato, bell pepper, and onion. Season with a pinch of salt. Lightly fry over low heat for 6–7 minutes, stirring often.

Then add the tomato sauce and let cook for 3 minutes to absorb the flavor of the vegetables. Remove from the heat.

Transfer the mixture to an ovenproof dish. Sprinkle the cheese on top and crack open the eggs over the cheese. Season with a little salt and pepper.

Bake in the oven at 400°F for 15 minutes. Serve straight out of the oven.
Tips & Tricks
Use your favorite cheese as long as it melts well.
Serve with a couple of slices of bread. If you have basil, arrange a couple of leaves over the dish.
