TVP, Zucchini, and Bell Pepper Gratin

Rehydrate the TVP. To do this, soak in a bowl of water for at least 20 minutes, then drain.

Wash the zucchini and red bell pepper. Cut the zucchini into thin rounds and the pepper into strips. Cut the onion into strips.

Heat a little olive oil in a large skillet. Add the vegetables and lightly fry over medium heat for 5 minutes, stirring often.

Add the TVP and season with a pinch of salt. Continue to cook for 3–4 more minutes.

Pour in the tomato sauce (homemade is best), stir, and reduce the heat to low. Simmer for 3–minutes.

Transfer the contents of the skillet to a suitable ovenproof dish. Sprinkle the grated cheese on top and place on the top shelf of the oven, on broiler setting, until the cheese melts. You’re in for a real treat.
Tips & Tricks
Feel free to use tomato puree instead of tomato sauce.
