Instructions

Preheat the oven to 400ºF.

Wash the eggplant and slice into medium or thin slices, approximately 1cm thick.

Add oil to a pan and heat it up. Once hot, cook the eggplant slices on both sides and set aside.

Chop the onion, garlic, and red bell pepper. Using the same pan you used before, add more olive oil and fry the vegetables on medium heat for several minutes.

Add the lentils to the pan and mix.

Now add half of the indicated tomato and let it cook for 3-4 minutes.

Spread some tomato sauce on the bottom of an oven-safe dish and place a layer of eggplant you had set aside. On top of the eggplant add the lentil filling you prepared and then cover with another layer of eggplant.

Add more tomato sauce on top of the eggplant layer and then sprinkle some cheese on top.

Place in the oven for approximately 15 minutes. Once ready, serve and enjoy!
