Instructions

Preheat the oven to 360ºF.

Wash and cut the eggplant lengthwise into about 1/2-inch-thick slices.

Head some oil in a grill pan and lightly fry the eggplant slices on both sides until they are nearly cooked and somewhat soft. This step may take about 10 minutes.

Arrange the eggplant slices on a baking sheet. Spread with the tomato sauce. Cover with cheddar cheese, and scatter pieces of mozzarella cheese over the top.

Bake in the oven for just 5-6 minutes. When you see the cheese has melted, turn off the oven, and serve immediately.
