Start by preparing the filling. For this, add some olive oil to a pan and grill the chicken breast. Once cooked, let it cool and then place in a food processor and give it a few whirls so that the chicken shreds. If you don't have a food processor you can do this using a knife.

Add the ricotta cheese to a bowl along with the shredded chicken. Use a fork or spoon to mix the ingredients. You now have the cannelloni filling.

Wash the zucchini and slice lengthwise into thin slices. For this you can use a mandoline, a slicer, or a knife, whichever you have.

Fill each slice of zucchini with the filling you have prepared and set aside.

Finely chop the garlic, onion, bell pepper, and the ends of the zucchini you used before.

Add some olive oil to a pan. Once it's hot lightly fry the vegetables you have just cut. Cook on medium-high heat for 3-4 minutes. After this time add the tomato sauce and mix well. Cook on low heat for 5 more minutes.

Add the sauce with the vegetables you have just prepared on a baking sheet. Start placing the filled cannellonis. Add the pesto sauce on top of the cannellonis and finish by sprinkling the mozzarella cheese on top.

Bake for 15-20 minutes at 400°F. After this time remove from the oven and serve!
