Instructions

Preheat the oven to 400°F.

Wash and finely slice the zucchini. Place in an oven-safe dish and add salt, garlic powder, pepper, and oil. Rub the seasoning on the zucchini and then bake for 25 minutes.

While the zucchini is roasting, dice the chicken breast into small pieces and set aside.

After 25 minutes, remove the zucchini from the oven and then add the chicken breast and oregano. Mix and then bake for 25 more minutes. Halfway through, stir again.

While the chicken is baking, cook the pasta according to the instructions.

Once the chicken and pasta are done, add the pasta to the chicken in the dish and mix well.

Tips & Tricks

You can serve with a bit of parsley, grated cheese, or roasted tomatoes.

For a vegan version, you can substitute the chicken for tofu.

If you would like, you can add other vegetables with the zucchini.

You can also add a bit of tomato sauce or crushed tomatoes to enhance the flavor.
