Ham and Zucchini Quiche

Wash and slice the onion and zucchini using a mandoline, peeler, knife, etc.
Place the slices of zucchini and onion on a baking sheet lined with parchment paper. Drizzle some oil on top and add some salt. Bake for 10 minutes at 400°F.
After this time remove the vegetables from the oven. Place in a bowl and add the beaten eggs, sliced ham, and shredded cheese. Mix well and then pour the contents into an oven-safe dish that is greased. Sprinkle some more cheese on top and bake for 20 minutes at 400°F.
