Preheat the oven to 400°F.

Wash and grate the zucchini. Put in a strainer and press well to squeeze out as much water as possible.

Beat the eggs.

In a bowl, combine the zucchini, beaten eggs, cheese and breadcrumbs. Season with a little salt. Mix well.

Line a baking sheet with lightly oiled parchment paper. Take a little of the mixture and place on the paper. Press down to flatten a little. Repeat the process until the mixture is used up.

Bake in the oven for 15 minutes. Then turn over and bake for a few more minutes. When they look done to you, turn off the oven and take them out.
