Instructions

Wash and dice the eggplant. Dice the onion and garlic.

Heat the oil in skillet. Add the garlic and onion and fry lightly, stirring often.

After 3 minutes, add the eggplant to the skillet. Season with a little salt. Lightly fry for 5 minutes, stirring often.

Then add the tomato sauce and stir well.

Next, transfer everything to a cast-iron iron skillet. Scatter the mozzarella cheese over the skillet and put into the oven at 400ºF for 10 minutes.

Serve in the skillet.
Tips & Tricks
If you don’t have a cast-iron skillet to put into the oven, no problem! Any ovenproof dish will works just as well.
