Instructions

On a cutting board dice the onion, zucchini, red bell pepper, and celery into medium-sized pieces.

Add olive oil to a pan. Once it's hot add the onion and zucchini and cook for 4-5 minutes on medium heat.

Add the bell pepper and celery and cook for 4 minutes.

Add the tomato puree and drained lentils, and garbanzos. Add some salt and mix. Cook on low heat for 10 minutes.

After this time, serve with a bit of rice and chopped cilantro.
