Rice Salad with Lentils and Tomatoes

Start by preparing the rice. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to color, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Wash the tomato and dice into small cubes.

Wash the lettuce and cut into small, thin strips. Remove the lentils from the can and drain.

In a bowl, add the rice, the tomatoes, lettuce, and lentils. Toss altogether and serve.
Tips & Tricks
You can serve the salad with other vegetables, for example, you can add shredded or sliced carrots.
If you'd like, you can top the salad off with some fresh cheese that is chopped into small pieces or crumbled.
