Broccoli and Chickpea Rice Salad
“We all know its important to eat legumes but sometimes it's hard to envisage how to prepare a legume dish to take to work. Here's an easy way to do it.”
1 small jar
Put a tablespoon of olive oil in a skillet and heat. Then slice up a garlic clove and add. When the garlic starts to color, add the rice. Stir for a couple of minutes and then add the hot water and a teaspoon of salt. Heat over high heat for 7 minutes and then lower the heat and simmer for another 8 minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand.
While the rice is cooking, prepare the other ingredients. Wash the broccoli and cut into florets. Drain the chickpeas and wash under running water to make sure they are very clean. Chop up the onion.
In a skillet with a little hot oil, fry the onion, chickpeas, and broccoli, stirring often. Season with salt.
When the rice is ready, add to the skillet and cook for a couple of minutes together with the other the ingredients.
Tips & Tricks
You can add soy sauce for extra flavor.
