Instructions

Wash and cut the broccoli into small florets. Cook for just 3 minutes in a pan of boiling water. Then drain and set aside for later.

Mince the garlic and fry in a skillet with olive oil, stirring often.

Add the cherry tomatoes, halved, and the broccoli. Season with a little salt and fry over medium heat for 5 minutes.

Transfer the contents of the skillet to a suitable ovenproof dish. Crack open the eggs over the vegetables and season with a little salt and pepper. Bake for 10 minutes at 360°F until the eggs are cooked.

Serve straight out of the oven.
