Instructions

Start by preparing the rice. For this, add 1 tablespoon of olive oil in a pot and when it's hot, add one garlic clove sliced. When it begins to color, add the rice. Stir it for a couple minutes and then add the hot water and a teaspoon of salt. Cook over high heat for 7 minutes and then lower the heat and cook over low heat for 8 more minutes. If in this time the rice has absorbed all of the water but is still hard, add more water. Let it stand with a cloth covering it.

While the rice is cooking, prepare the eggplant: wash and dice them. Slice half an onion into medium thick strips. Place the eggplant and onion aside.

Slice the other garlic clove and fry it in a pan for about 2-3 minutes over medium heat.

Add the eggplant to the pan. Sauté for 5 minutes. Sprinkle the curry, salt, and pepper onto the eggplant. Mix well. Let it cook over low heat for 4-5 more minutes.

Serve the curry eggplant over the rice on a plate.
