Instructions

Peel the sweet potato and cut into small chunks. Fill a pan with water and bring to a boil. Cook the sweet potato until tender when pricked with a fork. Then turn off the heat, drain, and set aside for later.

Prepare the other ingredients while the sweet potato is cooking. Wash the broccoli and cauliflower. Cut both vegetables into small florets and put into a food processor or blender together with the onion. Pulse in the food processor until the vegetables resemble rice grains. If you don’t have a food processor, you can mince the vegetables with a knife, though this will take a bit longer. Either way, the vegetables need to be in tiny pieces.

Heat some olive oil in a large skillet and lightly fry the vegetables, adding a pinch of salt, for around 5 minutes, stirring regularly.

Put a little olive oil into another skillet and lightly fry the turkey.

Assemble the plate: arrange the sweet potato on one side, put the turkey breast on another (whole or diced), as well as the broccoli and cauliflower rice.

Tips & Tricks

The broccoli and cauliflower doesn’t need to be cooked beforehand. This is only necessary if you are using frozen vegetables.

You can use soy sauce instead of salt. It adds extra zing.
