Broccoli, Tofu, and Sweet Potato Bowl

Instructions

Cut the tofu into cubes and drain well. Put into a bowl and add 2 tablespoons soy sauce. Let stand while you prepare the other ingredients.

Wash and cut the broccoli into smallish florets.

Peel and cut the sweet potato into small dice.

Boil the sweet potato in a pan of water with 1/2 teaspoon salt. They should be soft in 15 minutes, unless cut into large pieces. After 10 minutes, add the broccoli to the same pan and cook together with the sweet potatoes for the remaining 5 minutes. Turn off the heat and drain the vegetables.

Heat a little oil in a skillet, add the tofu and soy sauce, and lightly fry for a couple of minutes. Then add the broccoli florets and fry with the tofu for a few more minutes.

Arrange the broccoli, tofu, and sweet potato in a bowl.
Tips & Tricks
If you like, you can mash the sweet potato first, as per the photo. Just mash it with a fork to the desired consistency.
