Broccoli and Navy Bean Patties

Instructions

Wash and cut the broccoli into florets. Mince the garlic and onion.

Cook the broccoli in a pan of boiling water for just 4–5 minutes until cooked, but still firm. Then remove and drain. Let cool a little.

Heat a little olive oil in a skillet. Add the minced garlic and onion and fry over medium heat for a few minutes, stirring regularly.

Combine the broccoli, fried onion and garlic, and navy beans in a food processor and pulse a few times (don’t overdo it or the mixture will be too dense). You can even leave some whole chunks.

Add the beaten egg, a little salt, and cumin and mix well. Refrigerate for 15 minutes to cool.

Next, use your hands to shape a little of the mixture into individual patties. Make as many as you can with the mixture.

Fry on both sides in a skillet with a little hot oil. And enjoy!
