
Broccoli and Quinoa Patties

Instructions

Wash the quinoa under running water. Cook in a pan of salted boiling water according to the instructions on the package.

Cut the broccoli into florets and boil for 4 minutes in a pan of salted boiling water. Then drain and let cool.

Combine the onion and broccoli in a food processor and pulse a few times (don’t overdo it; you don’t want a puree).

In a bowl, combine the onion and broccoli mixture with the beaten egg, quinoa, flour, a little salt, and cumin powder and mix well. Refrigerate for 10–15 minutes to cool and firm up the mixture.

Next, use your hands to shape a little of the mixture into individual patties. Make as many as you can with the mixture.

Fry on both sides in a skillet with hot oil. Now enjoy!
Tips & Tricks
We used whole-wheat flour, but you can use any kind of flour you want.
You can also cook the patties in the oven if you prefer. Put the patties on a baking sheet lined with parchment paper and cook at 360°F for 20 minutes. Then remove and serve immediately.
