Sweet Potato Hamburgers with Salad

Instructions

Rinse the quinoa under water. Add 1 1/2 cups of water to a pot. Once it begins to boil add the quinoa and a pinch of salt and cook for about 20 minutes or until the seeds open. Remove, drain, and set aside.

Peel the sweet potato and dice into smaller cubes. Cook in a pot with salt. Once they are tender, turn off the heat and drain them. Add the sweet potatoes to a bowl and mash with a fork until you get a sweet potato puree.

Wash and cut the broccoli into small florets and cook for about 3 minutes. Once cooked, drain, and chop until you have small pieces.

Add the quinoa, sweet potato puree, chopped broccoli, grated cheese, oats, beaten egg, and a pinch of salt to a bowl. Mix the ingredients and let it stand in the refrigerator for at least 20 minutes.

After this time remove the hamburger mixture and make the patties. Heat up some oil in a pan and fry the patties on both sides.

Prepare the simple salad in a bowl. Add the base layer of freshly washed spinach. Next, add the nuts and place the patties on top.
