Tuna and Broccoli Patties

Instructions

Cut up and wash the broccoli and boil for 5 minutes in a pan of water with a pinch of salt. Drain well and shred with a fork.

Drain the tuna and put into a bowl.

Remove the crust from the bread and cut the crumb into small pieces. Add to the bowl with the tuna together with the broccoli and mix thoroughly.

Beat 2 eggs and add to the bowl. Use a fork to mix,incorporating fully into the mixture until no longer visible.

Use your hands to shape the mixture into patties.

Put a little oil into a skillet and fry the patties. Serve.
Tips & Tricks
You need to drain the broccoli thoroughly, making sure to remove as much water as possible. Do the same for the tuna when removing from the cans. Before adding the egg, use paper towel to remove as much liquid from the mixture as possible. This will make it easier for the egg to bind the mixture well.
