Tuna and Carrot Patties

Instructions

Mince the garlic and onion. Peel and grate the carrots.

Heat a tablespoon of oil in a skillet and add the garlic, onion, and carrots. Fry for 8 minutes, stirring often.

Drain the tuna and put into a bowl. Add the mixture of garlic, onion, and carrot, together with the egg, breadcrumbs, parsley, and salt. Mix well until until compact. If the mixture is too sticky, add another tablespoon of breadcrumbs.

Use your hands to shape the patties and fry in a skillet with another tablespoon of oil. Before cooking, it’s a good idea to refrigerate the patties for at least 1 hour to compact well.
Tips & Tricks
You can serve the tuna patties with grilled vegetables for an even more substantial meal.
If you use tuna canned in brine instead of oil, the patties will be much lighter.
You can make these tuna patties in large batches and freeze them. This way you will have something for an emergency.
