Peel and grate the carrots. Mince the onion. Wash and grate the zucchini.

Put the carrot and zucchini into a strainer and press well to squeeze out as much water as possible.

Heat a little olive oil in a skillet and lightly fry the onion, stirring often.

Beat the eggs with a little salt.

In a bowl, mix the onion with the carrot, zucchini,and eggs. Season with another pinch of salt. Add the breadcrumbs and mix everything well. Let stand in the fridge for 10 minutes.

Shape the mixture into patties.

Fry the patties in a skillet with oil, removing when cooked. Drain on paper towels. Serve.
