Broccoli, Carrot, and Zucchini Patties

Start by prepping the vegetables. Wash and cut up the broccoli. Peel and dice the carrot. Next, wash and grate the zucchini. Put into a strainer and press well on top to squeeze out as much of the water as possible. The more water you are able to remove, the easier it will be to make the patties.

Cook the carrot and the broccoli in a pan of boiling water with a little salt. After 4–5 minutes, take out and drain the vegetables.

Transfer the broccoli and carrot pieces to a food processor or blender and give a few sharp pulses to chop into very small pieces. Don’t overdo it because the vegetables shouldn't be blended. You can even leave some whole chunks.

Beat the egg and pour into a large bowl. Add the chopped broccoli and carrot to the bowl together with the grated zucchini and breadcrumbs. Mix everything together.

Use your hands to shape a little of the mixture into individual patties. Make as many as you can with the mixture.

Fry on both sides in a skillet with hot oil. Now enjoy!
Tips & Tricks
You can serve these broccoli patties with a yogurt sauce that’s really easy to make. In a bowl, combine the yogurt with 1/2 teaspoon salt, 1/2 clove minced garlic, and a little lemon juice. Mix and season with pepper. This sauce is amazing!
Do you want to make something more substantial? You can add a couple of cans of tuna. Just add the tuna to the vegetable, egg, and breadcrumb mixture and continue with the recipe.
