Quinoa Hamburgers with Vegetables

If you don't have cooked quinoa, start by cooking some. For this you should rinse the quinoa under water. Pour approximately 1.5 cups of water into a pot. When the water begins to boil, add the quinoa, a pinch of salt, and cook for approximately 20 minutes, until the seeds open. Remove, drain, and set aside.

Wash the zucchini and carrot and grate them. Mix both vegetables and press them in a colander to remove any excess water.

Add the drained and grated vegetables to the oats and flour, spices, cooked quinoa, and mix well. You will notice that the mixture will be dense.

Use your hands to pick up some of the mixture and to form the patties. If you press while making the shape the ingredients will become compact and maintain their form.

Add oil to a pan and cook in a pan.

Open the buns and place the patties on top. Follow the patty with half the sliced avocado and a bit of arugula. Finish by placing the other bread on top and your burger is ready!
Tips & Tricks
If you would like a delicious sauce to accompany the hamburger you can try mixing a bit of mayonnaise with sriracha.
