Zucchini and Sweet Potato Patties

Instructions

Peel and cut the sweet potato into small dice. Wash and cut the zucchini into small dice. Mince the onion.

Heat a little olive oil in a large skillet. Add the sweet potato and lightly fry for 5 minutes over medium heat, stirring often.

Next, add the onion and zucchini. Fry for 5 more minutes, stirring often.

Combine the beaten egg, breadcrumbs, a little salt, and the contents of the skillet in a bowl. Mix well.

Use your hands to shape a little of the mixture into individual patties. Make as many as you can with the mixture.

Fry on both sides in a skillet with hot oil.
Tips & Tricks
If the zucchini is very large, half will be enough.
Shaping the patties can be sticky and messy. Don’t worry. Once they’re in the skillet, the patties will firm up and hold their shape better. They shouldn't fall apart. Feel free to add another tablespoon of breadcrumbs (we didn’t have to).
