Instructions

Peel and dice the carrot and potato. Then, cut the broccoli into florets.

Put the carrot, potato, and broccoli into a pan of boiling water with a pinch of salt. After 4–5 minutes, take out and drain.

Transfer the vegetables to a food processor or blender and pulse lightly. Don’t blend until smooth because the mixture will become too dense; it’s fine to have a few chunks.

Add the beaten egg, breadcrumbs to the mixture, season with a little salt and pepper, and mix well.

Now use your hands to shape a little of the mixture into individual patties. Make as many as you can with the mixture.

Fry on both sides in a skillet with hot oil. Enjoy!
