Butternut Squash and Chicken Lasagna

Preheat the oven to 440°F.

Prepare the ingredients as follows: Cut the flesh of a butternut squash into small dice, cut the onion into medium slices, and slice the onions.

Put a little olive oil in a skillet and lightly fry the onion for 5 minutes over medium heat, stirring often. After 5 minutes, add the squash and mushrooms and season with salt and pepper. Reduce the heat to low and cook for 10 minutes, until the vegetables are tender and tasty.

Heat a little olive oil in another skillet and lightly fry the chicken. When cooked, transfer to a plate. Shred the chicken using a knife or a food processor, if you have one.

Transfer the chicken to the skillet containing the vegetables, stir, and let soak up the flavor. Cook for 2–3 more minutes.

Spread a little bechamel sauce in the bottom of an ovenproof dish. Lay with two lasagna sheets on top. Then spread with half the chicken mixture, cover with two cheese slices, and spread a little more bechamel sauce on top. Cover with two more lasagna sheets. Now assemble the top layer. Spread the sheets with the other half the chicken mixture, add two more cheese slices and a little bechamel sauce, and cover with two more lasagna sheets. Sprinkle a little cheese over everything and put in the oven for the time specified in the instructions on the lasagna sheet packet.
Tips & Tricks
Be careful to always read the packet instructions when using lasagna sheets. Sometimes the sheets come precooked and can be used as they are, or they may need to be boiled or soaked. The instructions also tell you how long the lasagna needs to bake in the oven. Don’t forget!
If you want to add more layers to the lasagna, feel free. Just use less filling in between each layer.
