Instructions

Microwave the rice for the time shown in the cooking instructions on the package. If you have a packet of regular rice and are going to cook it from scratch, follow the instructions in "tips and tricks” where we explain how to do this.

Cut the butternut squash into pieces, removing seeds and skin. Don’t make the pieces too big because they will take longer to cook. Medium-sized pieces are fine.

Rinse the chickpeas under running water and set aside for later.

Cut the onion into small pieces.

Heat a little oil in a skillet. When hot, add the onion and butternut squash and cook for 10 minutes over medium-low heat.

Then add the chickpeas and white wine. Let cook. The alcohol will gradually evaporate.

Finally, add the rice to the skillet. Mix well and cook for 2–3 more minutes and serve.

Tips & Tricks

If you have regular rice in a package, better yet since it's more natural. To cook it, put a tablespoon of oil, a cup of rice, and two garlic cloves in a pan over the heat. Lightly fry for a few seconds, stirring constantly without burning or browning the grains. Then add 2 cups water and a pinch of salt. Stir a little to mix all ingredients over high heat. Cook for 3–5 minutes. The water will gradually evaporate off. When you see that there are no more bubbles, reduce the heat to low, cover the pan with a lid, and let steam for 15 minutes. Then take off the lid and taste the rice. If you notice that it’s still a little hard, cook for 3–5 more minutes, then remove from the heat. Your white rice is ready to use.

Chickpeas with vegetables are a great way to make a nutritious one-dish meal. Try combining chickpeas with spinach, eggplant, zucchini, or broccoli.
