grated coconut

Instructions

Peel and chop the carrot in a food processor or blender.

Add the rest of the ingredients except the grated coconut to the processor or blender and blend all together.

Place the mixture into a closeable bowl or container and put in the refrigerator for about 30 minutes.

After the 30 minutes have passed make little balls out of the mixture and roll in the coconut. They are now ready to be enjoyed.
Tips & Tricks
If you have coconut oil you can use this instead of olive oil.
If you would like to sweeten the energy balls more you can add some sweetener or dehydrated fruit, for example, dates.
Keep refrigerated.
