
Oat and Carrot Muffins

Instructions

Preheat the oven to 350°F.

Peel and finely chop the carrot. You can do this by using a food processor (or similar) or manually.

In a bowl, add the rolled oats, sugar, flour, baking powder, salt, and mix well with a spoon.

In another bowl, beat the eggs. Add the carrot, yogurt, and sunflower oil. Mix well.

Now mix both bowls of ingredients together. Stir gently until it becomes a batter. Take out your muffin tray and lightly butter each mold to keep the muffins from sticking.

Pour the batter into the molds and put in the oven for 15-20 minutes, or until the toothpick you use to check the muffins with comes out clean.
Tips & Tricks
If you have vanilla essence or extract at home, add a teaspoon when you beat the eggs.
Add half a teaspoon of baking soda with the baking powder to boost it.
