Preheat the oven to 400ºF.

Peel and mince the garlic and onion and lightly fry in a skillet with a little oil, stirring often. When the onion softens, turn off the heat and set aside for later.

Wash the cauliflower. Use a grater or your food processor to chop into pieces the size of rice grains. Now you need to squeeze out all the water from the cauliflower. Put the cauliflower pieces in the middle of a thin cloth and roll up tightly. Pick up both ends of the roll and twist hard, gradually wringing out as much water as possible.

Once most of the water is removed from the cauliflower, combine in a bowl with the fried onion and garlic, 1 beaten egg, a little salt, and 2 tablespoons olive oil.

Make several mounds of the mixture on a baking sheet lined with parchment paper, shaping them into little cakes with your hands. Bake at 400ºF for 30 minutes. Then remove from the oven and serve.

Tips & Tricks

You can add scallion, cilantro, or a little parsley to the cauliflower, onion, and garlic mixture. They add amazing flavor.

If the egg you use is small, you may need to add another one. The ingredients need to absorb the beaten egg and still say soft so you can shape the mixture with your hands. You’ll know if you need to add an extra egg.
