Cauliflower, Pea, and Rice Bowl

Start by cooking the rice. Put 1 tablespoon olive oil in a pan and heat. Then slice up the garlic and add. When the garlic starts to color, add the rice. Stir for a couple of minutes and then add 2 cups hot water and 1 teaspoon salt. Cook over high heat for 7 minutes, then reduce and simmer for 8 more minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand for a few minutes.

Drain the peas from the can.

Wash and cut the cauliflower into pieces. Cook in a pan of boiling water for 4–5 minutes. Then turn off the heat and drain.

Heat a little olive oil in a large skillet and lightly fry 1 garlic clove, sliced, and the onion stirring often. When a little soft, add the cauliflower and peas to the skillet. Season with a pinch of salt. Cook over medium heat for 5–6 minutes, stirring regularly, until the contents of the pan are infused with the garlic and onion flavor.

Put the rice on a plate and serve the vegetables on the side.
Tips & Tricks
You can add other vegetables to the skillet, such carrots.
