Find a small round bowl and place it upside down on your countertop. It will serve as a mold to give your cheese bowl its form.

Slice the smoked salmon, wash the arugula, and dice the avocado and cucumber. Set aside these ingredients for later.

Heat several handfuls of grated cheese in a pan. Slowly, the cheese will melt with the heat of the stove and start to take the shape of an omelet. Once the borders start to brown you can remove using a spatula and place immediately on top of the small bowl you had placed upside down on the countertop. Use a napkin (to not burn yourself) and help form the shape while also removing the excess oil. It will cool down quickly and will form a basket/bowl shape. Do this for the amount of cheese bowls you want.

Fill each bowl with some of the sliced smoked salmon, avocado, diced cucumber, and several handfuls of arugula. Dress with oil, lemon, and salt.
