Chicken Au Gratin with Tomato Sauce

Instructions

Peel the tomatoes and give it a quick chop in the blender or use your knife to dice into medium size pieces.

Pour a little oil into a pan and cook the finely sliced garlic for several minutes.

Add the tomato to the pan, along with the salt, sugar, pepper, oregano, and basil. Mix together and let it cook over medium-low heat for 15 minutes. Stir occasionally. Taste, and correct the salt if necessary.

While the sauce is cooking, cook the chicken breast in another pan with a splash of oil.

Pour the tomato sauce into an oven safe baking sheet, or dish and then place the chicken breast on top. Sprinkle some cheese on top to finish it off.

Place the dish into the oven and bake for only 5-6 minutes at 400°F. When you see that the cheese has melted, remove the dish from the oven and serve.
