Chicken with Zucchini in Coconut Milk

Cut the chicken breast into cubes and season with salt. In a pan with olive oil, cook the chicken. When they are golden, turn off the heat and put aside (you will use them later on).

Wash the zucchini and cut them into slices or into cubes in your desired size. Cut the onion into strips. Finally, peel and cut the potato into small cubes.

In the same pan from before, add more oil and saute the onion and zucchini over medium heat. Saute for 4-5 minutes. Add the potato and cook for 3-4 minutes more.

In a pot pour the coconut milk, the powdered cumin, curry and salt. Cook over medium-low heat for 10-15 minutes to bring out all of the flavors. Check the potatoes to see if they're tender and correct the amount of salt if necessary.

In a bowl, add several tablespoons of chicken with zucchini and coconut milk. And if you'd like, a couple tablespoons of rice. Delicious!
