Curried Lentils and Chicken with Rice

Start by cooking the rice. To do this, put a tablespoon of olive oil into a pan and heat. Then add a sliced clove of garlic. When the garlic starts to color, add the rice. Stir for a couple of minutes and then add the water and a teaspoon of salt. Cook over high heat for 7 minutes, then reduce and simmer for 8 more minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand for a short while, covered with a lid.

Cut the chicken breast into cubes and sprinkle with a little salt. Put a little olive oil into a skillet and fry the chicken. When golden, turn off the heat, transfer to a container, and set aside.

Chop up the green bell pepper and slice the onion.

Add a little more oil to the skillet you used to fry the chicken and fry the onion and green bell pepper over medium heat, stirring often. When the vegetables are soft, add the lentils, chicken cubes, coconut milk, and curry powder. Cook over low-medium heat for 7–8 minutes to infuse the contents of the skillet with the different flavors. Adjust the seasoning with salt if necessary.

Put several tablespoons of rice into a bowl and top with the curried lentils and chicken. So delicious!
Tips & Tricks
If you like a little heat, add a chili pepper or a piece of one together with the coconut milk.
