Chicken in Mushroom Sauce

Start by making the sauce. Melt the butter in a saucepan over the heat. Add the water, a teaspoon lemon juice, and the cream. Season with salt and pepper and cook over medium heat until the sauce starts to thicken.

In the meantime, prepare the chicken. Spread the chicken breasts on a cutting board. Cut horizontally into cutlets if very thick. Season with salt and pepper. Put 2 tablespoons flour on a plate and dredge the chicken breasts, covering all sides well.

Heat a little olive oil in a skillet and fry the chicken breasts. Remove from the skillet and drain off any excess fat on paper towels.

While the chicken is frying, dice the onion and slice the mushrooms. Mince the garlic. Put a skillet on the stove with a little oil and add the onion, mushrooms, and garlic. Fry for 8–10 minutes, stirring often.

Then, pour the sauce into the skillet with the vegetables and let cook. The sauce will gradually thicken and part of the liquid will evaporate.

Finally, mix the chicken with the vegetables and the sauce and serve.
Tips & Tricks
If you have chicken broth, you can use this instead of the cup of water to make the sauce. You can grate a little fresh ginger and add in the last step. It will give the dish a very interesting flavor.
