Instructions

Fry the onion and carrots (peeled and cut) along with the garlic (not peeled).

When the onion is golden brown, wash and mince the mushrooms and add them to the pan. Add the curry and stir well.

Add the spinach and wait until they fry (they will turn a bit brown) along with the other ingredients.

Add 1 cup of water and let it absorb all of the flavors for several minutes.

Lastly, add the lentils (previously washed) and gently stir until they also absorb the other flavors. Make sure they don't overcook (since they are pre-cooked). Remove from the heat and your original stew is ready to eat.

Tips & Tricks

If you add a little bit of vegetables bouillon to the water, it will result in a tastier dish. Although, making a homemade vegetable stock will take it to a whole other level. It doesn't take long, and you can freeze it and have it ready for the next dish.

To add extra flavor and originality to the dish you can try adding a minced apple in the second step, with the mushrooms.
