Chocolate, Dried Apricot, and Date Bars

This recipe requires dried apricots. Don’t even think about using fresh apricots!

Soak the dates in water for several minutes. Pit the dates if using unpitted.

Combine the dates, peanut butter, and dried apricots in a food processor or blender and blend well.

Put the mixture into a mold, cover with plastic wrap, and flatten with a spatula. Melt the chocolate in a pan. Remove the plastic wrap from the mold and pour over the melted chocolate.

Refrigerate until the chocolate hardens. Then turn out from the mold and cut into bars.
Tips & Tricks
Dried apricots are fresh apricots with the water removed. This is very important to remember because the recipe won’t work if you use fresh apricots.
Keep any uneaten bars refrigerated.
