Couscous with Bell Peppers and Garbanzos

couscous

Instructions

Put water to boil with a pinch of salt. Before it begins to boil, turn off the heat and add the couscous. Let it stand until it fully hydrates and then stir.

Cut the peppers and the zucchini into small cubes. Peel and dice the carrots the same.

Add some oil to a pan. Once it's hot add all the vegetables you have just diced and cook together on medium heat for 10 minutes. If you like spices we suggest you add them at this point.

After the time indicated, add the previously drained and pre-cooked garbanzos. Mix with the vegetables and cook for another 5 minutes on medium heat.

Finish by adding the couscous and use a wooden spoon to stir everything together.
Tips & Tricks
If you like spices and you happen to have some around, we suggest you add some ras el hanout or ground cumin to the recipe.
