Instructions

Create the sauce in a small saucepan, combine the tomato paste, water, soy sauce, 1/8 cup of lime juice, and spices and cook over medium heat for approximately 5 minutes until well combined. Then set aside.

While the sauce is cooking, slice the peppers and onions into thin strips and cook them in a medium skillet over medium to high heat until they turn brown and soften approximately 7 to 8 minutes. Then set these aside as well.

In the same skillet, you used to cook the peppers and onions, cook the chicken breast over medium to high heat for approximately 5 to 6 minutes per side. Be sure the center of the chicken breast if fully cooked by cutting the thickest portion to ensure it is no longer pink in the middle.

When the chicken breast is done, drain any excess liquid and add the peppers, onions, and sauce back into the skillet. Heat until piping hot and serve.

We paired this with rice but it would also be tasty inside a tortilla!
