Wash all of the vegetables and dice.

Add some oil to a pot. Once it's hot add all of the vegetables and lightly fry for 3-4 minutes.

Add the diced chicken and sauté for several minutes with the vegetables.

Cover everything with water, add several pinches of salt and cook for approximately 20 minutes until the vegetables are tender and the chicken is cooked.

Remove and blend in your blender or food processor. Adjust the salt if necessary and serve the soup.
Tips & Tricks
Before blending the soup, you can add a drizzle of cream if you would like a smoother flavor.
You can substitute the water for chicken stock.
