Instructions

Start by making the sauce. In a bowl add the soy sauce, vinegar and finely chopped ginger. If you'd like to add a nice kick to your sauce you can add some cayenne.

In a pot add water. When it begins to boil, add the rice noodles and cook them as instructed on the package. Strain and set aside.

In a pan or skillet, pour some oil, the finely chopped garlic and begin to sauté the jumbo shrimp. They cook pretty fast, so pay close attention!

Wash the vegetables and cut them into thin strips.

Take out a big pan or a wok and add oil. Once hot, add the sliced vegetables. Sauté for 3-4 minutes over high heat stirring frequently.

Pour in the sauce that was made at the beginning and mix well. Stir fry until the veggies are al dente (if you like them soft you can cook them longer).

Place the cooked noodles and mix well with the vegetables so everything is covered with flavor. Remove from heat and serve. Place the cooked jumbo shrimp on top and enjoy!
Tips & Tricks
Try to cook the jumbo shrimp and the vegetables at the same time in different pans so that when you're ready to serve later, they're not cold.
If you don't have fresh ginger you can use powdered ginger instead.
You can finish off the plate by adding some peanuts on top of your noodles.
