Instructions

Wash the lentils and drain well. Put aside.

Peel or wash the vegetables as necessary and slice or dice them. In a pan, lightly fry them over low heat with a touch of salt and pepper (you can also add other spices and herbs). You should start by adding the onion or leek, after, the carrot, then the tomato, etc. If you'd like, you can also add the lentils, but add them at the end so they don't overcook.

Gently warm the tortillas in a pan or skillet or you can use the microwave. Once ready, you can start putting together the burritos. Take care not to put too much of the filling inside or else you won't be able to close the tortilla.
