Instructions

Was the mushrooms and slice them. Dice the pumpkin and finely slice the onion.

Add some olive oil to a pan, and cook the onion for several minutes over medium heat. When the onion is tender, add the mushrooms. Sauté everything for 4 minutes.

Add the cubed pumpkin and salt to the pan. Cook together with the other ingredients for 6-8 minutes.

Lastly, drain and add the lentils to the pan and cook for several minutes. Remove the pan from the heat and serve.

Tips & Tricks

Add cumin to the lentils if you'd like to add extra flavor.

You can add some water or broth to the pan if you believe the sauté is too dry. Add when you deem it necessary.
